Overview

A private half-day cooking class in a Marrakech riad: a market walk with the cook to buy spices and vegetables, then hands-on preparation of a tagine, cooked salads and flatbread, eaten together at the end.

The class starts in a neighbourhood market, not a tourist souk: you buy vegetables, herbs and spices with the cook and learn what goes into ras el hanout, which olives to choose and how preserved lemons are used. Back in the riad kitchen you each work at your own station.

The menu is set with you in advance — typically a chicken and preserved-lemon or vegetable tagine, two or three cooked Moroccan salads such as zaalouk and taktouka, and khobz bread or msemen, finished with mint tea poured the proper way. Vegetarian, vegan and gluten-free versions are easy to arrange. The class ends with lunch (or dinner, for afternoon sessions) of everything you made, and you leave with the recipes.
